the main difference between the 3 Star Wars trilogies

There's a distinct character and difference in main focus for each other the three Star Wars trilogies:

The original trilogy is focused on characters. Here are developed the iconic characters of the series, who become the focal point of the Star Wars universe.

The prequel is mainly focused on world building. There is greater emphasis on establishing the worlds, cultures and races of the Star Wars universe, building around the characters established in the original trilogy.

The sequel trilogy is focused on plot. With the world and characters established, the sequel movies are all about developing the story with plot twists, with most of the world and characters established in the previous movies.

Was this an intentional progressive development? It makes a lot of sense looking at the entire saga in retrospect.
